I know this post is a little late coming out (is anyone else struggling to believe that we’re already nearly halfway through June?!) but I had a couple of other posts planned for the start of June and thought I’d just make an effort to keep this new foodie highlights series going and post for May.
Wow, May was an amazing month for food! Being off on study leave left me with plenty of time to grab tasty meals out with friends or family, and don’t even get me started on the amazing food I indulged in in Paris…
As I’ve eaten so much wonderful vegan food this month I’ve left out the delicious meals I had in Paris from this post (find out more about them in my recent post, Eating Vegan in Paris), so here are my favourite vegan dishes from the month of May…

So yes, May really has been an incredible month from a food perspective - I certainly had plenty of delicious fuel to get me through my exams!
